Coconut buns

It’s the last Sunday of the month, so it’s baking day. This month: Coconut Buns.

Ingredients for around 50 biscuits

450g (1lb) self raising flour
225g (0.5lb) butter or margarine
285g (10oz) caster sugar
115g (4oz) desiccated coconut
2 large eggs

Rub the margarine into the flour until it forms fine bread crumbs. Now add the sugar and coconut and mix well. When all blended together, stir in the beaten eggs. It should now start to stick together, but if it is still too dry and bread crumb-like, add an extra egg to help it along.

When it is starting to clump, form it into small balls (slightly smaller than a golf ball) and flatten a little. Lay them out onto well-greased baking trays and cook for 20 minutes at 160 degrees C (350 degrees F) until slightly golden.

Remove from trays immediately and allow to cool on racks.
